The Perfect Polenta
I usually make mashed potatoes as a side, but I wanted to try something new! This polenta recipe tasted amazing and was so easy to make. I had to share this with you!
The Perfect Polenta
Serves 4
The classic ratio is 1 part polenta to 4 parts water, but chicken broth is what makes this fantastic!
You will need:
4 cups chicken broth
1 tsp fine salt
1 cup polenta
3 tbsp butter
1/2 cup freshly grated Parmigiano-Reggiano cheese (and a little extra for garnish)
15 mins prep/35 mins to cook/ready in 55 mins
Bring water and salt to a boil in a large saucepan. Pour polenta slowly into the boiling water, whisking constantly until all polenta is stirred in and there are no lumps.
Reduce heat to low and simmer, whisking often, until polenta starts to thicken. About 5 mins.
Polenta should still be slightly loose. Cover and cook for 30 minutes on low, whisking every 5 minutes. When Polenta is too thick to whisk, use a wooden spoon. Polenta is don when texture is creamy and grains are tender.
Remove from heat and mix 2 tbsp of butter and cheese. Cover and let stand 5 minutes. Top with remaining butter and a bit of cheese! Enjoy!
