Chicken Tortilla Casserole

This yummy recipe was given to me by one of my best friends. I love it because it can be prepared ahead of time to enjoy a quick and healthy dinner with your family. It has become such a staple in my home, that I don’t even need the recipe now because I know it by heart! If you love chicken enchiladas, but hate the hard work of making them, you will love this easy and delicious recipe. I just made this last night and it was the perfect fall meal.

You will need:

Today you can find a great deal at Safeway!

3 chicken breasts

8 pack of tortillas

16 oz of sour cream (the lite tastes great)

1 can (10.5 oz) cream of chicken soup (low sodium and low fat are great options)

15.7 of roasted salsa verde (choose how spicy you want the dish)

1 tsp garlic powder

1/2 tsp black pepper

1 lb of colby and monterey jack cheese (for extra spicy you can use spicy jack)

Directions:

  1. Put chicken in a pot and fill with water to a level just above the chicken breast. Cook on medium heat for about 30 minutes. When chicken is cooked, take out of the pot and put in a bowl. Shred the chicken with two forks (or you can wait until it cools to shred with your hands).

  2. Pre-heat oven to 350 degrees. Use a medium size bowl and mix the salsa verde, cream of chicken soup, sour cream, one teaspoon garlic powder, and 1/2 teaspoon black pepper together.

  3. Use a 11x8 casserole dish (available here if you need) and prepare to layer the dish. First add enough of the sauce mixture to just cover the bottom of the dish. Then begin layering the tortilla, handful of chicken, handful of cheese, 3 tablespoons of sauce and repeat. You can either cut the tortillas to fit the dish or just fold over. Make sure on the last and top layer that you completely cover with the sauce and cheese only.

  4. Cover with tin foil and bake on 350 degrees for 1 hour. Check under the foil and make sure that the sauce is bubbling, if not wait a 5-10 more minutes. The last step is to uncover and broil for a few extra minutes to crisp up the top. Now it is perfect!

  5. All done! Cut into squares and serve. Enjoy! It’s one of the best dinners you will have this Fall!
